Salty Girl of the Month – Jackie Wilcox
Jackie grew up in the Keys with a fishing rod in her hand. She can remember dolphin fishing with her dad when she was little and finding themselves thick in a pack of Schoolies. It was so thick the fish were bouncing off the boat. She can remember watching her dad grab them bare handed and throwing them in the boat faster than she could reel one in. She has learned a few things from her favorite Captain and her boyfriend, Captain Pete Rae. Jackie’s favorite vessel is the Sea Spud docked in Morehead City, NC. Her favorite place to fish is Isla Mujeres Mexico or in the Florida Keys where she grew up. Jackie prefers ultralite spinning tackle because it’s more fun to catch big fish on.
Her most unusual catch was deep dropping in Mexico and coming up with a 60 pound mystic grouper, a 30 pound strawberry grouper and a 20 pound queen snapper. She loved to watch them keep popping up. She made sure that they had wasabi on board for this massive catch.
Jackie is a firm believer in kissing your fish upon release. It has always given her luck and has brought them back bigger the following year. She got some great advice from Captain Anthony Mendillo from Isla Mujeres Mexico, who explained to her why God gave women hip bones. It’s the perfect place to plant the butt of my rod on. It also works wonders for all the tales told at the docks - those bruises support great fishing stories!
Her favorite thing to have on a boat (anyone who knows Jackie knows this) is Bain de Soleil Orange Gel #4. It gives her that tropical dark tan. (I have to concur – I love that stuff too! Jackie tells me that they now make a spray version… a must have for this summer season and it’s less oily!) Jackie’s two must haves while fishing is Miller Lite and Cheese-its! She claims that she can’t have one without the other. It’s a perfect small lunch and a great sea sick cure as well as a hangover remedy. Her favorite fish to catch and eat would be the Queen Snapper (pictured above). As soon as it’s cleaned right out of the box, Jackie has wasabi and soy sauce on a paper plate. You can always catch her eating it on the dock and still in her fishing clothes. Snapper is awesome when it’s fresh – and you can’t get any fresher than that!
Jackie’s favorite fish recipe is Captain Pete's Fried Snapper with Key Lime Butter Sauce. The snapper is fried in panko and covered with shredded parmesan cheese. Add some chopped green onion and tomato to the top and it’s smothered in sauce. (the sauce is a stick of melted butter, and a lot of lime juice).
She has lots of fishing memories but her top two would be Tarpon fishing in the Keys at night under the bridges and snaggin’ a big one. She out fished all the guys that night, she collected her own scale AND never spilt her beer with the boys. Her other fond memory was catching 29 sails in one day off Isla Mujeres in Mexico.
