Captain David Rogers is a native Floridian who grew up fishing Florida waters. He has 30 plus years experience fishing Florida. The Captain has fished many lakes, rivers and several famous destinations such as Englewood, Boca Grande, Islamorada, Chokoloskee, the Indian River and Mosquito Lagoon. Captain David is on several pro staffs which include Rip Tide Saltwater Lures, Daiichi Hooks, Hell's Bay Boat Works and Mercury Marine. He also is a regular guest on the Florida Sportsman East Central Florida radio show with Captain Russ Rivers and Captain Jim Ross and has been featured in the Orlando Sentinel five times.  Capt. Scott McCune has spent a lifetime fishing.  His fishing endeavors have taken him all over the world and most extensively to the South Pacific (Marshall Islands) and the Gulf of Mexico.  He has participated in fresh water and saltwater tournaments with great success for over 15 years.  Capt. Scott's focus for the last 8 years has strictly been on offshore fishing tournaments in the Gulf of Mexico.  His teams have won several tournaments each year, which shows an extreme consistency.  Capt. Scott's mission is to search for big fish and put them in the boat!  He keeps his vessels and equipment in excellent condition as he feel that is a professional and sportsman’s ethical responsibility.  Capt. Scott McCune wants to bring the average person closer to the real world of fishing by presenting an enthusiastic and helpful attitude in my business.

Captain of the Week: Capt. Angel Torres



Captain Angel Torres has always been entertained with the outdoor life. Whether it was camping, fishing, hiking, boating, or just being outdoors, he knew that was his dream. He always looked forward to the day when he would be that fisherman on TV, showing others with the same interest, his skills, and techniques. He continues to do this on a daily basis with his busy life as a Charter Captain. Whenever he is not fishing with clients you will find him fishing with friends or even alone. Some of the areas that he has fished include Massachusetts, New York, New Jersey, Mexico, Virginia, South Carolina and just about every shoreline in East and West Florida. Some of the species he has targeted are Brown Trout, Brookies, Stripers, Blues, Rainbow Trout, Salmon, Fluke, Amberjack, Snook, Spotted Trout, Weak Fish, Redfish, Shark, Goliath Grouper, Marlin, Sailfish, and Tarpon. It is safe to say that he has fished for just about every species you can think of on the East Coast.
Captain Angel grew up fishing on many Charter Boats on the East Coast and developed the ability to relate to clients very well. Captain of the Week: Shawn Raulerson


Captain Shawn Raulerson is the owner and Captain of FishNFinatic Charters.  Shawn is a passionate fisherman and outdoorsman. He grew up in Lakeland, Florida where most of his fishing was done with his family for Largemouth Bass.  Over the past 10 years, his passion changed from freshwater to inshore fishing.  Capt. Shawn has spent most of his lifetime fooling fish with artificial.  He has fished the Tampa Bay and Sarasota areas for Snook, Redfish, Trout and many other species.  Capt. Gary Beach's Whole Grilled Black Sea Bass with Herb Infused Extra Virgin Olive Oil - YUMMO!


One of my favorite restaurants in the world is in my back yard in Ocean City, Maryland. The Marlin Moon Grille is located in the Francis Scott Key Hotel on Route 50.  This restaurant is one of the very best on the East Coast.  My husband Bill and I have been going their since it first started in the old Ocean City Marlin Club building.

Chef and Owner, Gary Beach is truly talented and creative when preparing cuisine.  An avid fine wine drinker (lovin' the Cakebread) and a fishing enthusist, Gary enjoys what he does and it shows in his dishes.

This is just a sampling of his menu - I hope you enjoy the Grilled Black Sea Bass Recipe.  And - if you don't cook, come in to the Marlin Moon Grille and let Gary prepare it for you - it's a real treat!

Whole Grilled Black Sea Bass With Herb
Infused Extra Virgin Olive Oil:

-Whole Black Sea Bass cleaned and scaled
well (with bones)
-Extra Virgin Olive Oil
-Cracked black pepper
-Sea salt (sub. kosher salt)
-Fresh lemon juice
-Capers
-Chopped garlic
-Chopped shallots (sub sweet onions)
-Fresh rosemarry
-Fresh basil
-Fresh thyme
-Fresh parsley

Preparation
-Score both sides of fish on angles ¼ inch
-Brush fish with xvoo
-Salt and pepper fish
-Place on hot grill or in the oven
-Heat extra virgin olive oil up to 160° in sauce
pan (enough to drizzle over fish)
-Add chopped herbs, shallots and garlic
(to taste)
-Add capers (to taste)
-Add lemon juice (to taste)
-Add seasonings (to taste)

When fish is cooked through drizzle warm infused oil over fish serve with chopped parsley and lemon wheels
Hint: you can close lid of grill to cook fish
faster (like an oven)

Happy September

I don't know about you - but this summer has flown by so quickly.  It seemed as thought summer was just a blur this year.  Lots of great fishing this summer on my end.  Released a lot of billfish and my daughters had a great time fishing off of our docks.  My 4 year old pulled in a 22 inch flounder - or other words - dinner!    Gotta love when the little ones can pull in a keeper.

The Ultimate Summer Salad


This recipe has been requested many times over the years and I decided to post it here so I can share it with everyone.

I found this recipe hidden in another recipe from Louie's Backyard Cookbook (one of my favorite restaurants in the world... Louie's Backyard in Key West, FL).

I normally double or even triple this recipe - it goes FAST!

Sweet Corn Salad

4 ears fresh corn shucked
4 scallions, white and green part - thinly sliced
1 large red tomato, seeded and diced
2 TB chopped fresh parsley
2 TB cider vinegar
1 TB honey (I use a local organic brand)
1 TB Dijon mustard
1 tsp brown mustard seeds
6 TB canola oil
Sea Salt
Freshly ground pepper

Directions -
Bring 2 quarts of water to a boil. Cut corn from cob with sharp knife, cook the corn kernels in the boiling water for 4 mins. Drain well and set aside to cool. Prepare vinaigrette while the corn is cooling.

To make the vinaigrette, mix the vinegar, Dijon mustard and honey in a small bowl with the cumin and mustard seeds. Whisk in the canola oil. Season to taste with the salt and pepper.

When the corn is cool, add scallions, tomato and parsley. Toss the salad with the vinaigrette and refrigerate until ready to serve.

Twittering...

I started twitter about 6 months ago or so... at first loved it... then I hated it. At first I followed all the fun fishing people, friends and family and then within the last month - I was following over 2,000 people which I didn't sign up for. Some of which were whack-a-doodles, get rich types and people that probably never won homecoming king/queen and wanted to see how many friend they can get... so, I cleaned house and hopefully, I got rid of all the whack-a-doodles!
