Salty Girl of the Week:  Julie Parker

Julie has been fishing on the Chesapeake Bay for years!  Julie can always be found fishing on the beautiful Chesapeake Bay on her own boat, The Lexianna which is a custom baybuilt Charter Boat built in Rosehaven, Maryland.  It can accommodate up to 19 anglers.  Julie loves to fish with Captain Dave, her husband!  However Julie has a new love…live lining from her Stand Up Paddleboard!

Fishing has given Julie a bunch of great memories.   Julie and her husband have been teaching local kids about the species of the Chesapeake Bay for over 4 years now. They will take fish that were caught and teach them about the fish and how they can help save their habitats.  Julie loves to share the children’s excitement when the kids tell them about their fishing stories.  Her most memorable time fishing was the first time she took her own daughters fishing. Their faces were priceless when the first fish came over the side!      

Julie has a citation for flounder and a few of the Top 10 of the day placements in a local Rod n' Reel tournament. One day she hopes to fish a ladies tournament because she loves to fish with her girlfriends! (JULIE – come to OC during Poor Girls Open Week – you will have a BLAST!)

Julie’s favorite rod/reel has to be her custom pink spinning rod that her daughters had made for her for her birthday. It has a great little Okuma bait runner reel.  Julie’s most unusual catch is a plastic deck chair (that would surprise me too! Lol).  Her favorite things to have on board are good Music, sunshine and great company!  Julie also loves to have beer while fishing and peanut M&M's...they bring her good luck.  Julie’s favorite fish to catch and eat is Rockfish but she loves to eat tuna, but hasn’t had the thrill of catching one yet.   Her favorite release fish is Red Drum.

Julie urges other women to teach your kids to fish and respect the waterways.

Julie’s Salt Crusted Baked Rockfish served with lemon olive oil

    * 1 (3-pound) whole rockfish, scaled, with fins removed
    * Leaves from 2 sprigs fresh rosemary
    * Leaves from 2 sprigs fresh thyme
    * 4 pounds coarse sea salt
    * Water, as needed
    * Freshly ground pepper, as needed
    * Lemon infused olive oil

Directions: Preheat the oven to 450 degrees.
In a bowl, combine the rosemary, thyme, and salt with enough water to form a paste. Spread a layer of the salt paste, about half of it, on the bottom of a baking dish. Place the fish on top of the salt paste. Carefully spread the remaining salt paste over top of the fish, being careful to cover it completely. Bake fish for 25 minutes.

To Serve: Break the salt crust along the sides. Remove the upper crust from the fish taking care to keep the crust whole. (If you break the upper crust or crack into the fish from the top, the fish will turn out salty.) Gently remove the fillets.
